On Monday I took a walk at the Minnesota Landscape Arboretum, taking advantage of the milder temperatures early this week. When I first came home I didn’t really like any of the photos I made. But now, two days later I am finding several that I like. That’s often the way with my creative work.

Changing Times

When I look back on past work sometimes I am surprised by images I didn’t notice at the time that I now like. And often I look at images that I liked a lot when I first made them and now they don’t seem nearly as interesting to me. We grow and change all the time. Hopefully we also keep learning.

Health Improvement?

Speaking of change, a little more than two weeks ago I decided to work on improving my nutrition by eating more plant-based foods. I wouldn’t have been able to think about doing this had I not finally emerged from a year and a half gut flare-up that simply would not go away. I’ve now had six weeks without a gut episode. What a gift! I am hoping that by including more plant-based foods and less meat and refined food that I will be able to keep my digestive system healthy.

Finally I’m able to add raw veggies, nuts, seeds, legumes, whole grains, and other plant foods that I could not tolerate for so long. This morning I made a batch of oatmeal for breakfast that was epic. It was so good that I wrote down a recipe for it so that I can make it again.

Just in case you’re an oatmeal lover, here it is. It really was the best oatmeal I’ve ever had.

Berry Good Oatmeal

Makes 2 generous servings
2 cups water
a pinch of salt
1 cup old fashioned oats
2 T hemp seeds
2 T chopped walnuts
1 cup frozen wild blueberries
1/4 apple chopped
2 T almond butter
1 sprinkle of ground ginger
1 sprinkle cinnamon

Bring water, salt and oats to a boil and cook until done (about 5 minutes). Remove from heat. Add remaining ingredients and mix well. (The hot oatmeal will thaw the blueberries.) The almond butter adds a richness to the porridge that I had not expected. You could use peanut butter but I think it’s flavor might overwhelm the other flavors.

Dish up a bowl, add a little bit of almond milk and a touch of maple syrup. Enjoy.
